Battered Zucchini
There is a lot you can do with zucchini but one of my favorite ways is to eat it battered!
For this recipe you will need eggs, seasoning salt, olive oil (other cooking oils will work), and flour (I used my Gluten Free Flour Blend but back when gluten was still an option I used regular wheat flour.
- Slice the zucchini 1/8 inch to 1/4 inch slices and place them in water - it helps the flour stick
- Beat the eggs
- Place a skillet on your heat source, I love using cast iron but I have used other types of skillets as well. Lightly oil the pan and wait for it to heat up.
- Dip each slice in the flour first until it is lightly coated and then dip in the eggs until it is completely coated
- Place on the skillet
- While it is cooking I sprinkle the seasoning salt
- Cook each side until lightly browned
- Serve and enjoy while hot!
