BBQ Sauce
I have a large quantity of maple syrup that came from a red maple. It definitely has a very strong maple flavor and I prefer the sugar from sugar maple trees on my pancakes/waffles/french toast. Realized it would make for a very good sugar for making BBQ sauce! Just whipped this up today and will try it for making pulled pork tomorrow!
4 cups tomato sauce
1 cup red maple syrup - I had boiled it down to 80% sugar concentration which is much thicker than regular maple syrup (possible substitution of 1/2 cup regular real maple syrup and 1/2 cup molasses)
2 tablespoons liquid smoke
2 tablespoons worcestershire sauce
2 cloves garlic (finely chopped)
1 teaspoon paprika
1 teaspoon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup lemon juice
1/3 cup apple cider vinegar
1/2 cup brown sugar
Just put all the ingredients into a sauce pan and bring to a boil. You can either use it right away or put in the refrigerator. I will probably try to can some later in the year once I have more tomatoes to make a larger batch!
