Pop Cornbread with Maple Syrup
Not a typo but turning popcorn into cornbread! Decided to give it a try after several successful popcorn harvest that we can not possibly eat it all as popped! Also have a lot of maple syrup so used that as a sweetener!
- 2 Cups ground up popcorn
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 1 Cup Milk
- 1/4 cup maple syrup
- 4 Tablespoons butter (melted)
- 2 large eggs
In one bowl mix up all the dry ingredients, in another mix up all the liquid ingredients, and then add the liquid to the dry ingredients and mix well. Pour the batter into a lightly greased pan (8x8 square or 8" round). Bake for 20-20 minutes at 350 F.
